Fructooligosaccharides (FOS) are fibrous polymers of fructose anchored by a single glucose. FOS imparts a sweet, pleasant flavor at a lower caloric content (1.5 kcal/g) than table sugar, making it ideal for low-calorie applications. This highly soluble fiber can be used to improve the flavor and sweetness of low calorie foods, as well as to improve the texture of fat-reduced foods. FOS is also considered to have prebiotic activity, since this fiber stimulates the growth of helpful bifidobacteria in the human colon.
