Isomaltooligosaccharides (IMO) are fibrous polymers of glucose linked together in such a way that the human body can only partially digest them. This fiber is a sugar substitute, imparting 2.8-3.2 kcal/g – or roughly 75% the caloric content of table sugar.
IMO has a pleasant, mildly sweet flavor (roughly 40% of table sugar) and can be used in foods and beverages. IMO is also considered to have prebiotic activity, similar to FOS, which stimulates the growth of helpful bifidobacteria in the human colon.
